Many vegetable oils are consumed directly, or indirectly as ingredients in food – a role that they share with some animal fats, including butter, ghee, lard, and Schmaltz. The oils serve a number of purposes in this role: Shortening – to give pastry a crumbly texture.
Colors & packaging available : The general method for measuring color of vegetable oils is the Lovibond tintometer and all color readings reported are the Lovibond red and yellow scale. Crude cottonseed oil varies from pale cherry red to black.
