the “Chia Pet”, but may not have realized that Chia is a superfood! A member of the mint family, this flowering plant is cultivated for its small, oval-shaped seeds. Chia is grown commercially in its native countries: Guatemala and Mexico, as well as Bolivia, Argentina, Ecuador, and Australia. Rich in omega-3 fatty acids, the seeds yield 25-30% extractable oil, including a high level of alpha-linolenic acid. Historically, chia’s omega-3 fatty acid content, protein and fiber made it the food of choice for the Aztec peoples of Central America, who would consume it to fuel their long distance runs. Processes: Seed cleaning, roller milling to produce free flowing consistent full fat meal, cold pressing and hammer milling to produce 6-8% oil flour and 100% oil, and propane solvent extraction to produce fully defatted (
Saw Palmetto is a slow-growing palm with approximately twenty leaves that jut out from a bare, spiny stalk in a fan-shape producing reddish-black berries. It grows in clumps or dense thickets in sandy coastal lands or as undergrowth in the southeastern United States, most commonly along the Atlantic and Gulf Coastal plains, but also as far inland as southern Arkansas. Saw Palmetto has been used for hundreds of years as both a food source and as a medicinal plant. Its berries are rich in fatty acids and phytosterols, and study of its extracts has shown that it may have beneficial effects on urinary health, in particular benign prostatic hypertrophy, and other medical conditions.
Cocoa grows on Cacao trees within approximately 20 degrees to the north and south of the Equator. The immature pods show a variety of colors, usually green, red, or purple; and then tend towards yellow or orange as they mature, especially in their creases. Once picked, the pods are cut open to extract the seeds which are left to ferment (or “sweat”) for several days. After the fermentation period is complete, the beans are dried and packed in burlap bags for shipping. The cocoa beans are then processed into cocoa powder, cocoa butter, baking chocolate andor dark and milk chocolate. Chocolate and cocoa are rich in flavonoids, specifically epicatechin, which may have beneficial effects on cardiovascular health.
