All our Table Olives are hand picked up , which is friendly for both, the Olive Tree and the Olive itself. Most of our etransforming process is made by hand, following the multi millenium Mediterranean culture of harvesting and preparing Table Olives.

WHY WE CHOSE TO COMBINE OLIVE WITH LEMON ?

Lemons are rich in vitamin C, which is much more than the daily consumable value. They are also packed with flavonoids, iron, magnesium, calcium, potassium, vitamin B6, copper, and folates. Modestly, it can be assured that they work as anti-toxic and anti-infectious substances.

Processed olives can be marketed year-round, whereas fresh olives sold for home processing have a set season .

 The season for fresh olives is from September through January Demand for olive  has increased significantly in recent years, largely in response to the increased publicity of associated health benefits for unsaturated fats (Xiong et al, 2014)

Some of the promoted beneficial attributes of olive include being a high source of antioxidants such as vitamin E and K and being a monounsaturated fat, which helps to prevent cardiovascular disease (“What is in Olive Oil” – The Olive Oil Source, 2016).
