Alan Spence came to the United States after having perfected the art of smoking salmon in his native Scotland. Our Classic Smoked Salmon is a designed America smoke profile of a bold combination of fresh salmon and smoke with a firm texture. Smoked using kosher salt and oakwood for a full 18 hours, this smoked salmon is perfect for sandwiched and bagels loaded with your favorite toppings of tomato, onions, lettuce, herbed cream cheese, etc. Spence has truly created an American “Classic”. The succulent, mild flavor is distinctively Scottish. Buttery soft and subtly smoky, the taste will carry you to the traditional Scottish smokehouse. Spence & Co. starts with premium quality fresh Atlantic Salmon. We then dry brine by hand using only kosher salt and then delicately cold smoke over Oakwood chips. Trimmed to perfection, the brown meat and pelicule (a thin skin that forms on the outside during smoking) are removed exposing the delicate center of the salmon. Each slice is then hand interleaved for ease in separation. The most trimmed product on the market today, our flagship Traditional Scottish Style Smoked Salmon is second to none. Taking our inspiration from the Vikings, we at Spence & Co., Ltd. are proud of our Gravlax as we traditionally cure the fish and do not smoke as originally intended. Using only fresh Atlantic Salmon, we carefully season the fish with salt, cane sugar and just the right amounts of dill and lemon juice. From the pristine waters New Zealand, Spence brings you New Zealand Prime’s cold smoked King Salmon. The king salmon is smoked using traditional hard wood native to New Zealand, Manuka wood. The Manuka wood smoke gives a light smoke profile to complement the distinctive flavor and texture of the New Zealand King Salmon. Available in 4oz. packages.

The Scottish Laird (Lord) was offered the choice of the estates bounties. Included in this was the king of the river, the Atlantic Salmon. As with all our smoked salmon offerings, the selection of the finest, fresh Atlantic salmon is paramount. Only then can the Scottish smoker work his magic. Our salmon are carefully selected then gently smoked over smoldering oak chips. The outer salmon is trimmed away to reveal the delicate center of the salmon.
