The Scottish Laird (Lord) was offered the choice of the estates bounties. Included in this was the king of the river, the Atlantic Salmon. As with all our smoked salmon offerings, the selection of the finest, fresh Atlantic salmon is paramount. Only then can the Scottish smoker work his magic. Our salmon are carefully selected then gently smoked over smoldering oak chips. The outer salmon is trimmed away to reveal the delicate center of the salmon. The traditional of smoking Haddock dates back to the 18th century in the town of Findon Scotland. Spence & Co. honors our heritage by lightly smoking haddock for this time honored dish. This cold smoked cured haddock is intended to be cooked prior to eating. Traditionally prepared poached in milk with finely chopped onions and new potatoes. Excellent in Chowders too.
